Quinoa is harvested for its seeds. It is usually boiled with liquid. Quinoa is popular in salads and side dishes. This recipe turns quinoa into patties. Cooked with savory broth, covered with breadcrumbs, and fried until golden brown. These quinoa patties are delicious, healthy, and gluten-free.
This recipe takes about 60 to 65 minutes to make. Serves 24 individual cakes.
Ingredients:
• 1 cup of red quinoa
• 10 oz of extra firm tofu
• 1 tbsp of tamari sauce
• 0.5 lb. of Shiitake mushrooms, rinsed and minced
• 1 medium onion, sliced
• 2 tbsp of minced garlic
• 1 to 2 chilli, finely diced
• 2 carrots, diced
• 1 tbsp of fresh lemongrass stalk
• 1 tbsp fresh ginger, chopped
• Half a cup of mayonnaise
• 1 tbsp of Dijon mustard
• 1 tsp of hot sauce
• 3 celery stalks, diced
• 1 red spring onion or 3 green spring onions, chopped
• Half a cup of chopped cilantro or parsley
• 3 cups of breadcrumbs
Instructions:
To make the broth, start with adding oil in a saucepan and cook garlic.
Deglaze with tamari sauce and water.
Place tofu, lemongrass, red spring onions, cilantro, chili and ginger into the broth.
Bring to a boil and let it simmer for at least 30 minutes.
In a pan, drizzle with oil and add minced Shiitake mushrooms and onions.
Cook for a few minutes and then add ginger and chili.
Add carrots and quinoa.
Strain the broth and pour 1.5 cups into the quinoa.
Season with pepper.
Cover and simmer for 20 minutes over low heat.
Remove the tofu from the broth and puree.
Place the tofu over the quinoa.
Transfer the quinoa to a baking tray to cool down.
Once cooled, transfer to a bowl and mix in celery, red spring onion, Dijon mustard, mayonnaise, and remaining herbs.
Roll the mixture into balls and coat with breadcrumbs.
Flatten the balls slightly with a spatula to look like patties.
Fry the patties until golden brown.
Ideas And Tips:
• If you don’t have red spring onions, you can use green spring onions or shallots.
• Tamari is a gluten-free version of soy sauce. Compared to soy sauce, tamari is darker and richer. It is specifically a Japanese form of soy sauce. It is a byproduct of miso paste.
• You can put the Shiitake mushrooms in a food processor instead of being minced with a knife.
