Seafood paella is one of the iconic and delicious Spanish rice dish that offers a variety of seafood like shrimps, clams, mussels, and squids. This is a perfect dish to impress your guests for a special dinner.
Ingredients:
• 6 large shrimps
• 6 clams
• 5 baby squid (cut into rings and tentacles)
• 6 mussels
• 6 fresh romano or green beans
• 2 cups seafood stock
• 1 cup white wine
• 1 cup fresh peas
• 1/2 cup canned butter beans (drained and rinsed)
• 1/2 cup white rice
• 2 tbsp olive oil
• 1/2 tbsp smoked paprika
• 1 tbsp fresh flat-leaf parsley (chopped)
• 1 teaspoon fresh rosemary (finely chopped)
• 1 onion (finely diced)
• 1/2 tomato (finely diced)
• 1 pinch salt
• 1 pinch saffron threads
• 1 lemon (cut into wedges, optional)
Instructions:
This recipe takes about 55 minutes. Serves 2-3.
Set a large pan over high heat.
Pour olive oil.
Put tomato and onion.
Sprinkle salt and smoked paprika to taste.
Saute and stir for 3-4 minutes or until softened.
Add and stir butter beans and romano beans.
Add rice and cook for 2-3 minutes or until rice is covered with oil.
Place clams, shrimps, and mussels on top of the rice mixture.
Pour white wine and add paprika.
Pour seafood stock.
Sprinkle rosemary.
Let it simmer for 5 minutes or until the clams and mussels have opened.
Remove clams, shrimps, and mussels from the mixture and set aside.
Add peas.
Let it simmer for 20-25 minutes or until rice is softened.
Add baby squids.
Return clams, shrimps, and mussels.
Let it simmer for 2-3 minutes or until squid is cooked through.
Remove from heat.
Transfer to a plate.
Top it off with chopped parsley and lemon wedges.
Serve and enjoy!
