Sponge cake is an Italian cake that combines flour, sugar, and eggs. Some put icing on top of the sponge cake for aesthetic and a more flavorful cake. Some preparations put fillings in the sponge cake such as sweet creams and fresh mixed fruits.
Ingredients:
• 1 cup flour
• 1 tsp baking powder
• 1/2 tsp baking soda
• 2 eggs
• 1/2 cup sugar
• 1/2 cup oil
• 1/3 cup milk
• 1 tsp vanilla
• some flour (for dusting)
Instructions:
Sift into a mixing bowl 1 cup flour, 1 tsp baking powder, and 1/2 tsp baking soda.
Whisk to combine well.
Set aside.
In a blender, crack open 2 eggs, 1/2 cup sugar, 1/2 cup oil, and 1/3 cup milk.
Blend for 2 minutes or until the mixture is smooth and creamy.
Transfer to a mixing bowl.
Gradually add the flour mixture and stir to combine.
Gradually add milk and stir to combine.
Texture should be smooth.
Add 1 tsp vanilla.
Mix well.
Prepare a 7-inch round cake pan.
Grease lightly with oil.
Add some flour for dusting.
Spread to distribute evenly across and the sides of the pan.
Pour the mixture into the pan.
Spread to distribute evenly.
Set aside.
Set a large deep pan over medium flame.
Place a stand in the middle of the pan.
Cover the lid.
Let it heat for 10 minutes.
After 10 minutes, place the round cake pan on top of the stand.
Cover with lid.
Reduce to low heat and let it cook for 25-30 minutes.
After 25-30 minutes, stick a toothpick in the middle of the cake to check if already cooked.
If it comes out clean, then your cake is ready.
Remove the cake from the pan.
Slice for servings and enjoy!

For those who prefer to use the oven, place the round cake pan in a preheated oven at 180 C.
