This recipe is a vegan version of that classic Italian dish. The sauce is made from spinach, yogurt, and avocados. Cherry tomatoes are roasted in the oven and garnished on top of this creamy sauce.
Ingredients:
• 1 pack of spaghetti
• 2 to 3 handfuls of spinach
• 1 onion
• 3 to 4 cloves of garlic
• 2 avocados
• 1 cup of plain yogurt
• 1.5 cup of cherry tomatoes
• Pepper & garlic salt
• Olive oil
• Basil
• Cheese
Instructions:
This recipe takes 45 minutes to make. Serves 2 to 3.
Cook the spaghetti according to the package instructions.
Preheat oven to 175C.
Place parchment paper on a baking tray.
Line up the cherry tomatoes on the baking tray.
Drizzle olive oil. Season with pepper and garlic salt.
Roast in the oven for 30 minutes.
Place a frying pan on low heat. Drizzle with olive oil.
Cook onion and garlic for a few minutes until tender and translucent.
Add spinach and let them wilt for a few minutes.
Season with salt and pepper.
Remove from the heat.
Slice avocado and place in a blender.
Put the spinach mixture and yogurt in the blender.
Blend until smooth.
Strain spaghetti and transfer to a bowl.
Pour sauce and mix well. Garnish with baked cherry tomatoes.
Garnish with cheese and basil if preferred.
Ideas And Tips:
• You can also use basil instead of spinach and turn the sauce into something similar to pesto.
• Any type of seasonings and herbs can be used in this recipe depending on your preference.
