Prepare this easy egg muffin as a healthy breakfast for you and your kids. This recipe is so simple that you can have your kids help with the preparation. The mixture of eggs, chicken sausage, and your favorite vegetables makes a creative, healthy, and delicious food for breakfast. Add in some cheese and seasonings for more flavor. This recipe takes about 30 minutes to prepare and cook.
Ingredients:
• 6 medium eggs
• 4 tbsp milk or cream
• 1/4 tsp salt
• 1/4 tsp black pepper
• 2 tbsp chicken sausage (chopped)
• 2 tbsp white onion (chopped)
• 2 tbsp carrot (grated)
• 1 tbsp tomato (chopped)
• 3 tbsp red, green, yellow capsicum (diced)
• 1/2 cup cheese (grated)
• 1/2 tsp black pepper
• 1/2 tsp salt
• 1 tbsp butter
• some grated cheese (optional for topping)
• some finely chopped scallion (optional for topping)
Instructions:
In a medium mixing bowl, add six eggs, 1/4 tsp salt, and 1/4 tsp black pepper.
Whisk until well combined.
Add 4 tbsp of milk or cream.
Whisk until well combined.
Set aside.
Set a frying pan over medium heat.
Add 1 tbsp butter and melt it.
Add chopped white onion, grated carrot, chopped tomato, diced mixed capsicum, and chopped chicken sausage.
Stir and cook until vegetables soften.
Remove from the heat and transfer to a large bowl.
Add grated cheese.
Mix well.
Add the egg mixture.
Mix until well combined.
Prepare a muffin tray.
Lightly grease with oil.
Fill each muffin cup with the egg and vegetable mixture.
Sprinkle with some grated cheese and finely chopped scallion on each cup.
Put inside a preheated oven at 350 F and bake for 15 minutes.
Once done, remove each egg muffin from each cup.
Serve and enjoy!
