Vegetable Omelette Muffin Recipe | Easy Breakfast Recipe | Snacks Recipe

Looking for a delicious recipe for breakfast? Try this quick and easy vegetable omelette muffin. This can also be prepared as a snack for your kids. This only requires affordable and easy to find ingredients and should only take about 20 minutes.

Ingredients:

• 4 eggs
• 1/2 tsp salt
• 1/4 tsp black pepper
• 1/4 cup tomato (chopped)
• 1 medium size onion (chopped)
• 3 green chili (chopped)
• 1 medium-size carrot (chopped)
• 1 tbsp coriander leaves (chopped)
• 1/4 cup mozzarella cheese
• 2 tbsp sweet corn (boiled)
• Oil

Instructions:

In a mixing bowl, add 4 eggs, 1/2 tsp salt and 1/4 tsp black pepper.
Beat well.
Add all chopped ingredients – tomato, onion, green chili, carrot, and coriander leaves.
Add mozzarella cheese and boiled sweet corn.
Mix until well combined.

Brush with oil the prepared muffin cups.
Fill the muffin cups with the egg and vegetable mixture.

Cooking without Oven:
Place a stand and heat the pan over medium flame for 10 minutes.
After 10 minutes, place the muffin cup mold on the stand.
Let it cook for 10-15 minutes.

Cooking with Oven:
Preheat oven at 180 C.
Bake the mixture for 10-15 minutes.

Remove from the muffin cups.
Serve and enjoy!
