Ingredients:
• 4 white bread slices
• 4 tbsp butter (room temperature)
• 1/3 cup carrot (julienned)
• 2 tbsp onion (thinly sliced)
• 1/2 cup cabbage (thinly sliced)
• 2 large eggs
• 1/2 tsp salt
• 1/4 tsp black pepper
• 1 tbsp butter (for frying)
• American cheese slices
• 1 tsp sugar
• Ketchup
• Yellow mustard
Instructions:
Spread butter on both sides of each bread slice.
Set aside.
In a mixing bowl, add 1/3 cup julienned carrot, 2 tbsp thinly sliced onion, and 1/2 cup thinly sliced cabbage.
Crack open 2 large eggs.
Season with salt and pepper.
Mix well.
Set a nonstick frying pan over medium heat.
Melt 1 tbsp butter.
Pour egg and vegetable mixture and give it a rectangular shape.
Let it cook for 3-5 minutes on one side and slice in half to give you 2 squares.
Flip on the other side and cook for another 3-5 minutes or until golden.
Remove from the pan and transfer to a plate.
Using the same pan, toast the bread slices on both sides.
Switch off the heat.
Add a slice of American cheese, followed by the egg and vegetable omelet.
Drizzle 1 tsp sugar.
Put ketchup and yellow mustard depending on your taste.
Cover with another toasted bread slice.
Serve as it is or slice in half.
