Fish Sauce Chicken Wings Recipe

Fried chicken wings are a favorite among many, and there are so many different ways to cook it. This recipe gives you fried chicken wings with a Vietnamese kick. It may sound strange, but this fish sauce is a delicious way to level up the flavor of your fried chicken wings. You can use the fish sauce recipe for other fried food as a dipping sauce.

This recipe takes about 30 minutes to make. Serves 2 to 3.

Ingredients:

• 10 pieces of chicken wings
• 2 tbsp of tapioca starch or cornstarch
• 3 red chili peppers
• 1 large clove of garlic
• 3 tbsp of sugar
• 3 tbsp of fish sauce
• 3 tbsp of water
• 1 tbsp of fresh lime or lemon juice
• Cooking oil

Instructions:

Cut the chicken wings into 2 parts, separate at the cartilage
Pat them dry with paper towels.
Season both sides with salt and pepper.
Squash garlic and chilies together.
In a bowl, mix sugar, water, fish sauce, and lime/lemon juice together. Stir until sugar is dissolved.
Add garlic and chili paste into the sauce.
In an airtight bag, add starch and chicken wings. Shake until all the chicken wings are coated.
Add oil in a frying pan.
Shake off the excess starch from the chicken wings before putting on the pan.
Put the chicken in the pan while the oil is still cold.
Turn on the heat to medium.
Fry the chicken wings for 10 minutes on each side.
Dip the chicken wings in the fish sauce while still hot.

Ideas And Tips:

• Another option is to drain the excess oil from the chicken wings and then remove the excess oil from the pan. Pour the sauce in the pan and place the chicken on top. Simmer for 5 to 10 minutes.
