Caramel bread pudding is an easy recipe for your leftover bread. It is a delicious and sweet dessert that is perfect with ice cream or yogurt. Add your favorite nuts and raisins as garnishing to add more flavor and texture to your bread pudding. Enjoy!
Ingredients:
Irish Bread:
• 2 cups all-purpose flour
• 1 cup whole wheat flour
• 1 tsp baking soda
• 1 tsp Kosher salt
• 1.5 cups buttermilk
• some flour (for dusting)
Bread Pudding:
• 1.5 loaves of bread of your choice
• 3/4 cup granulated sugar
• 1/2 tsp salt
• 1/2 tsp cinnamon
• 2 cups milk
• 1 tsp vanilla extract
• 1/4 cup whiskey
• 1/4 cup heavy cream
• freshly grated nutmeg to taste
• 2 beaten eggs
• some crushed pistachios (optional)
• some honey (optional)
Salted Caramel Sauce:
• 1 cup granulated sugar
• 4 tbsp unsalted butter
• 1/2 cup heavy cream
• 1 tsp kosher salt
Instructions:
Irish Bread:
Preheat oven to 350 F.
Prepare a mixing bowl.
Add all-purpose flour, whole wheat flour, baking soda and kosher salt.
Whisk to combine.
Gradually add buttermilk while stirring the mixture.
Continue to stir until it becomes a dough.
Transfer to a work surface.
Knead the dough and form it into a ball.
Set aside.
Prepare a baking sheet.
Dust it with some flour.
Place the dough ball on the baking sheet.
Scour top of the dough with a tick-tock like pattern.
Place it inside the oven.
Let it bake for 30-45 minutes or until golden brown.
Once done, remove it from the oven and let it cool.
Bread Pudding:
Slice any bread you have into 1-inch cubes.
You can use the Irish bread or any leftover bread in your pantry.
Place the bread cubes on a 11 x 7-inch baking dish.
Set aside.
Set a small pot over medium-high heat.
Add granulated sugar, salt, cinnamon and milk.
Cook and whisk the mixture until well combined.
Add vanilla extract and whiskey.
Continue to whisk until the mixture is well combined.
Once done, transfer the mixture into a mixing bowl.
Put the mixing bowl in a bowl full of ice to make the cooling process faster.
Add heavy cream, grated nutmeg and beaten eggs.
Continue to whisk until well combined.
Once done, pour it over the bread cubes.
Sprinkle some crushed pistachios.
Drizzle with some honey.
Place it inside the preheated oven.
Let it bake for 35 minutes.
Once done, remove from the oven.
Set aside.
Salted Caramel Sauce:
Meanwhile, prepare the salted caramel sauce.
Set a small pot over medium heat.
Add granulated sugar.
Cook and stir until sugar completely melts.
Once melted, add unsalted butter.
Continue to stir until the butter completely melts and combines with the melted sugar.
Let it simmer for 10 seconds.
Gradually add heavy cream while stirring the mixture.
Let it simmer for 20 seconds.
Add kosher salt.
Continue to stir until well combined.
Once done, remove from the heat.
Assembly:
Slice the bread pudding into squares for servings.
Drizzle over the salted caramel sauce.
Serve and enjoy!

You can skip the Irish bread part if you have leftover bread in your pantry.
