Lentils, which originate from Asia and North Africa, are part of the legume family. They are considered a dietary staple throughout South Asia. Lentils are packed with fiber and a good source of protein. They are also easier to cook and season compared to dried beans.
This recipe is a classic Indian lentil soup locally called Masoor Dal. What makes this soup delicious is the mix of herbs and spices, called masala. It is a hearty and filling soup which can be served on its own or with rice and/or chapatti bread for a complete meal.
Ingredients:
• 1 cup of whole lentils, soaked in water for a least an hour
• 3 cups of water
• 1 tbsp oil
• ¼ tsp cumin seeds
• ¼ tsp mustard seeds
• ¼ tsp turmeric powder
• ⅛ tsp asafoetida powder
• 1 small onion, finely chopped
• 4 cloves garlic, finely chopped
• 1 tsp ginger, finely grated
• 1 green chili, finely chopped
• 1 medium tomato, chopped
• ½ tsp coriander powder
• ¼ tsp cumin powder
• ¼ tsp red chili powder
• ½ tsp salt
• 1 tsp lemon juice
• 5 sprigs of cilantro or coriander leaves chopped
Instructions:
This recipe takes about 15 to 20 minutes to make. The lentils need to soak in water for at least an hour. Serves 4 to 5.
Drain lentils and put them in a pressure cooker.
Add water and salt.
Put the lid on and cook over high heat for 5 minutes.
Turn off heat and let the pressure dissipate on its own.
Once all the pressure has gone down, remove the lid and set aside.
In a separate pan over medium heat, heat oil.
Add mustard seeds, cumin seeds, asafoetida powder, turmeric powder, and onion.
Stir then add garlic, ginger, and green chili.
Sauté until the onions turn light brown but not caramelized.
Add tomatoes and cook for 2 to 3 minutes.
Add cumin powder, red chili powder, and coriander powder.
Cook for another minute.
Turn off heat.
Carefully pour into the lentil soup.
Let the soup boil for 2 to 3 minutes over medium heat.
Pour lemon juice and sprinkle cilantro leaves on top.
Turn off heat.
Serve in a soup bowl.
