A bowl of granola with fresh fruits and milk is a delicious breakfast. Store-bought granola can contain refined sugars, oils, and preservatives which can harm one’s health. Why not make your own granola using soaked nuts and seeds? With this recipe, you can easily make your own granola without sugar or oil but just as sweet and crunchy as the store-bought ones. Also, instead of dairy milk, this recipe uses freshly made almond milk. Enjoy a healthy and tasty bowl of homemade granola with almond milk for breakfast or even as a snack.
Ingredients:
• ½ cup of blueberries
• ½ cup almond milk
Almond Milk:
• 3 cups water
• 1 ½ cup of soaked raw almonds
• 3 pitted Medjool dates
Granola:
• ¼ cup soaked raw almonds
• ¼ cup soaked raw sunflower seeds
• ¼ cup soaked raw walnuts
• ¼ cup raisins
• ¼ tsp salt
• ¼ tsp ground cinnamon
Instructions:
This recipe takes about 10 minutes to make. The nuts and the seeds need to soak in water overnight. Serves 1 to 2.
To make almond milk, put almonds, water, and Medjool dates in a blender.
Blend until smooth.
Place a nut bag in a bowl.
Pour almond mixture into the nut bag.
Squeeze out all the milk from the almond pulp.
To make the granola, put almonds, sunflower seeds, walnuts, raisins, and salt and cinnamon in a food processor.
Pulse just until you get granola-like consistency.
Put the granola and blueberries in a bowl.
Pour almond milk and serve.
Ideas And Tips:
For the almond milk, you can add ½ tsp vanilla extract, ¼ tsp almond extract, and ¼ tsp salt.
The almond milk can store in the refrigerator for up to 5 days. Make sure to put it in a sealed container.
For the granola, you can also use pumpkin seeds, pecans, hazelnuts, cashew nuts or pistachio nuts.
