Raw “Spaghetti” Italiano

Zucchini is also known as courgette. It is a summer squash that is long and green. It resembles a cucumber. Just like its family member the squash, zucchini originated in the Americas. Its name is from the Italian word “zucchina” which translates to gourd, marrow, pumpkin or squash. Zucchini is often cooked, but it has gained popularity in the raw food movement. It is now used in salads as well as a pasta substitute.

In this recipe, all of the ingredients are raw. The pasta is replaced by thinly sliced zucchini. Topped off with herbs, vegetables, and seasonings, this “spaghetti” is incredibly refreshing, light, and healthy.


• 3 to 4 zucchini
• 2 to 3 tomatoes
• 1/4 head of cauliflower
• 1/4 cup of nutritional yeast
• 1 tbsp of Italian seasonings
• 1 tsp of salt
• 2 tbsp of balsamic vinegar or 1 tbsp of lemon juice


This recipe takes 15 minutes to make. Serves 4 to 5.

To make the spaghetti, use a spiralizer, vegetable peeler or a knife to cut the zucchini into long, thin strips.
Cut the tomatoes and cauliflower in small chunks.
In a small bowl, add cauliflower, Italian seasonings, nutritional yeast, and salt. Mix well.
In a bigger bowl, place your zucchini pasta.
Add tomatoes and bowl of cauliflower mix into the zucchini.
Toss and stir until well incorporated.
Drizzle with balsamic vinegar or lemon juice.

• You can add more herbs and spices to this recipe. Some suggestions include basil, parsley, and red pepper flakes.
