Beetroot, often known simply as “beets”, is a root vegetable that is delicious and easily added to a healthy meal. Beets are known to be low in cholesterol and saturated fat. They are a healthy source of dietary fiber, potassium, and Vitamin C. They can be cooked and prepared together with grilled steaks or pork tenderloin. They are also a healthy addition to vegetable salads, shawarmas, gluten-free pasta dishes, and even cakesm like this one!
Ingredients:
For the cake:
• 5 cups pulp of beet juice
• 2 cups soaked beets
• 1 1/2 cups soaked dates
• 1 cup raisins
• 1 tbsp raw and dried carrot
• A pinch of cinnamon
• Small strip of vanilla bean
For the dressing:
• 3 cups macadamia nuts
• 1 tbsp rose water
• 2 1/2 cups coconut water
• A pinch of cinnamon
• Small piece of vanilla bean
• 1 cup soaked dates
Instructions:
For the cake:
Prepare a food processor.
Add all ingredients for the cake in the processor.
Blend well to combine.
Set aside.
For the dressing:
Prepare a blender.
Add all ingredients for the dressing.
Blend well to combine.
Set aside.
Assembly:
Prepare a cake tin.
Add half of the beet mixture as the first layer on the bottom of the cake tin.
Spread evenly.
Add half of the dressing as the second layer and spread evenly.
Add the remaining beet mixture as the third layer and spread evenly.
Top it off with the remaining dressing.
Smoothen the surface.
Place inside the fridge and chill for 2-3 hours or until set.
Remove from the fridge.
Slice into equal portions.
Serve immediately and enjoy!
