Grilled Chicken With Mint Raita

Grilled chicken with mint raita is a delicious dinner recipe you can prepare for the weekend. The chicken is marinated with a flavorful mixture of spices and yogurt. It is then grilled to perfection and served with mint raita.

Ingredients:

• 700 grams chicken
• 1/2 cup plain yogurt
• 4 cloves garlic (chopped)
• 1 tbsp ginger (chopped)
• 1 1/2 tsp coriander powder
• 1 tsp cumin powder
• 1 tsp Garam Masala
• 1 tsp red chili powder
• 5-6 pieces green chili (stems removed)
• 3 tbsp coriander leaves (chopped)
• 1 1/2 tsp dried fenugreek leaves (optional)
• 1 tbsp mustard oil or cooking oil
• 3 tbsp lime juice
• 1 1/2 tsp salt

Mint Raita:

• 1/2 cup plain yogurt
• 2 tbsp cucumber (chopped)
• 1 tsp roasted cumin
• 1 tbsp mint leaves
• salt to taste

Instructions:

In a bowl, add plain yogurt.
Add chopped garlic and ginger.
Add seasonings – coriander powder, cumin powder, Garam Masala, and red chili powder.
Add green chilies, chopped coriander leaves, and dried fenugreek leaves.
Drizzle with mustard oil or cooking oil.
Add lime juice and salt.
Mix until well combined.
Pour the marinade over the chicken and coat well.
Let it marinate for at least 2 hours.

Set a grill pan over medium heat.
Grill the marinated chicken for 35-40 minutes and continually flip until golden brown.
Remove from the heat and let it cool.

Meanwhile, prepare mint raita.
In a bowl, add plain yogurt and chopped cucumber.
Season with toasted cumin, mint leaves, and salt to taste.
Mix until well combined.

Serve the grilled chicken with mint raita.

Fatayer (Veggie Fatayer) Recipe

Fatayer is a Middle Eastern meat pie that can also be filled with spinach or cheese. But what to do when you like the taste of the fatayer filled with meat, but you would prefer not to eat meat? This recipe is the right one for you then! It is not difficult to make and it is totally delicious.

Ingredients:

• 2 1/2 Cup All-Purpose Flour
• 3.5 oz (100g) Textured Soy Protein
• 1/2 Bunch (1 oz / 30g) Parsley
• 1 Cup Plain Yogurt
• 1 Onion
• 2 Garlic Cloves
• 1/3 Cup Olive Oil
• 2 Tbsp Vegetable Oil
• 2 Tsp Instant Yeast
• 1/2 Cup Marinara Sauce
• 1/2 Tsp Salt
• 1 Tsp Sugar
• Curry Seasoning
• Ground Chili
• Pepper
• Salt

Instructions:

Dough:
Combine yogurt, salt, sugar, instant yeast, and olive oil.
Gradually whisk in flour.
Knead for 5 minutes.
Grease a bowl with olive oil and transfer the dough.
Cover the bowl and let rise for 45 minutes.

Filling:
Soak the soy protein in water for 30 minutes.
Dice the onion.
Fry the onion in vegetable oil until it gets golden.
Stir in the curry seasoning, ground chili pepper, and mashed garlic cloves.
Drain the soy protein and add to onions.
Cook on medium for 3 minutes.
Stir in salt.
Mince the parsley and stir it in.
Add the marinara sauce, stir, and cook for 10 minutes.
Divide the dough into smaller pieces.
Roll the pieces into thin oval shapes.
Add the amount of filling of your choice.
Seal the edges, leaving the middle open.
Place the fatayers on parchment-lined baking sheet.
Preheat the oven to 400F/204°C.
Bake the fatayers for 16 minutes.

Tips and ideas:

Fatayers are, thanks to their small size, ideal snacks or appetizers.

Fatayers can be stored in the refrigerator for a couple of days too.

5 Minute Pizza Dough From Scratch

Whether we want to celebrate something or simply want to save time feeding our families, pizza seems to be on top of our list. Who would not want to enjoy a box of pizza with family and friends? With this recipe, making a pizza from start to finish takes lesser time than that it would for the pizza delivery guy to appear on your doorstep.

Ingredients:

This recipe takes about 30 minutes to make. Serves 1 pizza.

Dough:
• 1 ¾ cups of self-rising flour
• 1 cup of plain yogurt

Toppings:
• 4 tbsp pizza sauce
• ¼ cup of minced garlic
• 6 slices of whole milk mozzarella cheese
• ½ cup of sliced baby portabella mushrooms
• ¼ cup of shredded parmesan cheese
• ½ tbsp Cajun seasoning
• ¼ cup of shredded fresh basil leaves

Instructions:

Preheat the oven to 500°F.
To make the dough, put flour and yogurt in the bowl of a stand mixer.
Mix for 5 minutes on high speed.
Transfer the dough on a floured working surface and knead the dough for a few minutes.
Form the dough into a 12-inch round pizza crust.
Transfer the dough to a floured pizza peel.
Evenly spread pizza sauce on top of the dough.
Arrange the mozzarella cheese slices on top of the sauce.
Spread the sliced mushrooms on top, then the parmesan cheese.
Sprinkle Cajun seasoning on the pizza crust.
Bake in the oven on a preheated pizza stone at 500°F for 14 minutes.
Take the pizza out from the oven and let it cool for 1 to 2 minutes.
Cut the pizza into 6 or 8 slices.
Top with basil leaves and serve.

Ideas And Tips:

If you can’t find self-rising flour, you can use a mixture of 1 cup of regular flour and 1 tbsp baking soda

If you want a thinner pizza crust, form the dough into a 14-inch crust.

You can also choose from other toppings like onions, bell peppers, zucchini, tomatoes, sweet corn kernels, peas, pineapples, olives, pesto, artichoke hearts, eggplant, baby corn, guacamole, broccoli or asparagus.
