Vegetable Curry Puffs Recipe | How to Make Curry Puffs

These easy and tasty vegetable curry puffs are small pies filled with a seasoned mixture of potatoes, carrots, and peas. These puffs are perfect as snacks or appetizers. They are said to have originated in the Malay Peninsula. There are a few popular variations such as “empanada,” “samosa,” or “pastel.”

Ingredients:

• 2 sheets puff pastry (thawed)
• 1 large onion (chopped)
• 2 medium carrots (diced)
• 2 medium potatoes (boiled and diced)
• 1 cup frozen peas
• 3 tbsp olive oil
• 2 cloves of garlic (crushed)
• 1 tbsp grated ginger
• 1 celery stalk (chopped)
• 1 tsp curry powder
• 1 tsp Garam masala
• 1/4 tsp turmeric powder
• 1 tsp thyme
• 1/3 cup water or vegetable stock
• 2 tbsp finely chopped parsley
• 2 green onions (chopped)
• egg wash

Instructions:

This recipe takes about 1 hour and 10 minutes to prepare and cook. It makes 12 puffs.

Set a frying pan over medium heat.
Add 3 tbsp olive oil and warm it up.
Saute chopped onions for 5 minutes or until golden.
Add crushed garlic, grated ginger, and chopped celery stalk.
Saute for additional 2 minutes.
Season with curry powder, Garam masala, turmeric powder, and thyme.
Stir and cook for 2 minutes.
Add diced carrots and frozen peas.
Stir and cook for a few minutes until carrots are tender.
Add diced boiled potatoes.
Season with salt and pepper to taste.
Stir to mix well.
Add water or vegetable stock and cook for 5 minutes.
Add finely chopped parsley and chopped green onions.
Switch off the heat.
Mix while the pan is still hot.
Set aside and let it cool down.

Preheat oven at 350 F.

Lay down the puff pastry sheets.
Cut them into 5-inch squares.
Get a spoonful of the vegetable mixture and place it in the middle of each square.
Fold to make a triangle.
Press the edges to seal.
Do this with the remaining puff pastry squares and vegetable mixture.
Place the puff squares on a parchment-lined baking sheet.
Brush each puff square with egg wash.
Place inside the preheated oven and bake for 25-30 minutes or until golden brown.
Once done, remove from the oven.
Let it cool for about 10 minutes.
Serve and immediately.

Vegan Corn Dogs Recipe

Corn Dogs are best served as an appetizer, snack, or lunch. This easy to make and yummy recipe has a healthier version for those who are vegan lovers. Vegan corn dogs may be new to your taste buds, but this will surely get the attention of your family and friends. This recipe takes about 30 minutes.

Ingredients:

• 1 cup flour
• 1 1/2 tsp baking powder
• 1/2 tsp baking soda
• 1/2 brick silken tofu
• 1/3 cup cornmeal
• 1/4 cup sugar
• 1 1/4 cup almond milk or soy
• 1 tbsp agave
• 1 tsp salt
• Vegan sausages or hotdogs
• Some cornstarch (for the hotdogs or sausages)
• Vegetable oil (for deep frying)

Instructions:

In a mixing bowl, add flour, cornmeal, sugar, baking powder, baking soda, and salt.
Whisk until well combined.
Add brick silken tofu and break into bits.
Add almond milk and agave.
Mix well.
Put the batter in the fridge for 10 minutes.
Set aside.

Cut hotdogs or sausages in half.
Insert a skewer on each hotdog or sausage.
Dip each into some cornstarch.
Set a deep pan over 350 degrees of heat.
Heat oil for deep frying.
Dip each into the batter set aside earlier.
Deep fry until golden brown.
Serve immediately and enjoy!

Vegan “Tuna” Salad Using Chickpeas (Garbanzo Beans)

Vegan “tuna” salad is a classic, healthy appetizer idea that is very simple and easy to make. It will give you a healthy and tasty recipe while being vegan of course.

Ingredients:

• 1 cup Chickpeas or Garbanzo beans
• 1 stalk celery
• 2 tbsp vegan mayonnaise
• Dulse flakes

• Coconut Aminos or soy sauce
