Philly cheesesteak is a sandwich made from slices of beefsteak and topped off with a generous amount of melted cheese. It originated in Philadelphia which is the largest city in the state of Pennsylvania in the US. There are now numerous variations of this popular sandwich. Some use chicken instead of beef. In this recipe, all of the ingredients are vegan. Seitan is prepared with stock and baked in the oven. Melted vegan cheese is poured over the seitan slices and stuffed in a bun.
Ingredients:
Dry Ingredients:
• 1.5 cup of vital wheat gluten
• 1/4 cup of nutritional yeast
• Half a cup of garbanzo bean powder
• 2 tbsp of brown sugar
• Half a tbsp of mesquite
• Half a tbsp of garlic powder
• Half a tsp of turmeric
Wet Ingredients:
• 1 tbsp of Worcestershire sauce
• 1 cup of vegetable stock
• 1 tbsp of soy sauce
• 1 tsp of liquid smoke
• 2 cloves of shredded garlic
• Black pepper
Seitan Stock:
• 1.5 cup of vegetable stock
• 1 diced onion
• 4 garlic cloves
• 2 bay leaves
• 1/4 cup of brown sugar
• Half a tsp of chili powder
• 1 tbsp of dried parsley
• 1 tbsp of molasses
• 2 cups of water
Daiya Cheese Sauce:
• 1 cup Daiya cheddar cheese
• Half a cup of soy milk
• 1 tsp of garlic powder
• Half a tsp of chili powder
• Half a tsp of paprika
• Black pepper
• 1 tbsp of dijon mustard
Instructions:
This recipe takes about 2 hours to make. Serves 2 to 3.
Preheat the oven to 350F.
In a large bowl, mix all of the dry ingredients together. Remove all the lumps.
In a separate bowl, whisk all of the wet ingredients together.
Pour the wet ingredients into the dry ingredients. Mix well until dough forms.
Knead the dough for about 15 minutes. Cover with a plastic wrap and set aside to rest.
Place all of the ingredients to make the seitan stock in a saucepan. Heat over the stove for 5 to 10 minutes.
In a casserole dish, drizzle oil in the bottom. Carefully place rolled out seitan logs.
Pour the seitan stock into the casserole dish and cover.
Cook for 1 to 1.5 hours. Flip the seitan halfway through.
Place all of the ingredients to make the cheese sauce in a saucepan.
Cook over medium heat until the cheese melts.
Sauté onion and poblano pepper.
Grill burger or hotdog buns.
Remove seitan from the oven and let cool. Slice and chop into thin strips.
To assemble, spread vegan mayonnaise on the bun. Add seitan, cheese sauce, and sauted onions.
Ideas And Tips:
• Cooked seitan can be stored in the fridge for a week. If kept frozen, it stays good for a month.
