What I Eat In A Day (Summer) – Healthy Vegan Recipes

Due to the summer heat, cooking is something you don’t look forward to doing. These 5 recipes are raw vegan meals that you can do in under 15 minutes. The only cooking done here is to boil the pasta noodles, which you can substitute with raw zucchini noodles. Delicious, gluten-free, dairy-free, egg free and 100% vegan, these recipes are a must-try this summer.


Green Power Smoothie:

• 1 cup of water
• Half of a large cucumber
• 1 lettuce head
• 3 to 4 celery stalks
• 1 ripe banana
• Half of a lemon
• 2 dates

Salsa Soup:

• 4 medium-sized tomatoes
• 1/4 cup of red onion
• Half a cup of spinach
• 1 clove of garlic
• 1 tbsp of lemon juice
• 1/4 tsp of cumin
• 1/8 tsp of red pepper flakes
• Half a tsp of sea salt
• 1/4 tsp of pepper
• Optional toppings: diced cucumber, tomatoes, and avocado

Kale Tacos:

• 3 large dinosaur kale leaves
• Half of a large cucumber
• 1/4 cup of celery
• 2 tbsp of red onion
• 1/4 cup of cherry tomatoes
• Half of a yellow bell pepper
• 1.5 tbsp of creamy Tahini dressing

Creamy Tahini Dressing:

• 1 cup tahini
• Half a cup of lemon juice
• 1/4 cup of celery
• 1 clove of garlic
• Water
• Salt
• Pepper

Coconut Berry Ice Cream:

• 3 frozen bananas
• 2 dates
• 3/4 cup of frozen berries
• 2 tbsp of shredded coconut
• Optional toppings: chia seeds, fruits, sunflower seeds

Creamy Avocado Pasta:

• 250 grams of brown rice pasta
• 1 avocado
• Half a cup of spinach
• 1 to 2 garlic cloves
• 2 tbsp of lemon juice
• 1 tbsp of olive oil
• 1 tbsp of water
• 1/4 cup of pistachios
• Half a tsp of salt
• 1/4 tsp of black pepper

Simple Side Salad:

• Half of large cucumber
• 2 tomatoes
• 1/8 cup of red onion
• 1 tbsp of capers
• 1 tbsp of apple cider vinegar
• 1 tbsp of olive oil
• 2 tbsp of fresh basil
• Salt

This recipe takes about 5 minutes to make. Serves 1.

Place all of the ingredients in a blender starting with the water. Blend until smooth.

Salsa Soup:

This recipe takes about 5 minutes to make. Serves 1 to 2.

Place all of the ingredients in a food processor. Whirl until smooth.

Kale Tacos:

This recipe takes about 5 to 8 minutes to make. Serves 3 tacos.

Dice all of the vegetables.
Spread tahini dressing on kale leaves.
Add chopped vegetables.

Coconut Berry Ice Cream:

This recipe takes about 5 minutes to make. Serves 1 to 2.

Place all of the ingredients in a blender. Blend until smooth.

Creamy Avocado Pasta:

This recipe takes about 10 minutes to make. Serves 2.

Cook the pasta according to package instructions.
Place all the ingredients in a food processor and blend until smooth.
Pour sauce over the pasta and mix well.

Ideas And Tips:

• Aside from pistachio, you can also use other nuts like walnuts or almonds. You can also remove nuts altogether from the recipe.
