Parathas are one of the most popular unleavened flatbreads in India. They are typically made with whole wheat flour, salt, water, and ghee or oil. Parathas can be flavored with different herbs and spices, rolled, stuffed or just eaten as an accompaniment to meat, poultry, fish, and vegetable dishes. Although parathas are generally healthy, the ones sold on the streets of India can contain too much oil or butter.
This recipe does not use any oil or butter to make the dough. The oil is only used during frying so the dough does not stick to the pan. The tasty and healthy stuffing is made from a mixture of cheese and vegetables. If you like pizza or calzone, you will surely love making and eating this Indian pizza paratha.
Ingredients:
• 2 cups of whole wheat flour
• ½ tsp salt
• 1 cup of water
• 1 ¼ cups of grated mozzarella cheese
• ½ cup of thinly sliced bell peppers
• ½ cup of thinly sliced onions
• ¼ cup of cooked corn kernels
• 10 pitted black olives, sliced
• ½ tsp salt
• ¼ tsp Italian seasoning
• 1 cup of pizza sauce
• 1 cup of pesto
• oil
• flour
Instructions:
This recipe takes about 45 minutes to make. Serves 6 to 8.
To make the paratha, mix whole wheat flour, salt, and water in a large mixing bowl until a dough is formed.
Knead the dough for 5 minutes.
Cover the dough and set it aside for 15 to 20 minutes.
To make the filling, mix mozzarella cheese, bell peppers, onions, corn kernels, olives, salt, and Italian seasoning in a large bowl.
Take a portion of the dough and form it into a ball.
Coat with plain flour, then roll it out on a flat surface until you form a thin, round pizza crust.
Spread about 1 to 2 tbsp of pizza sauce on the dough.
Spread enough filling mixture on 1 side of the dough, leaving about an inch of space on the edges.
Fold the other half of the dough over to enclose the filling.
Press the sides of the dough using a fork to seal.
Take another portion of the dough and roll it into a thin, round pizza crust.
This time, use pesto instead of pizza sauce for the base.
Spoon filling mixture on the center of the dough.
Fold all 4 sides of the dough to the center to form a square.
Gently press the dough so it sticks together to seal.
Heat a cast iron skillet over medium heat until smoke appears.
Put paratha in the center of the pan.
Cook for 1 minute, then flip.
Drizzle oil on top of the paratha and gently press.
Cook for another minute, then flip.
Drizzle oil again on top of the paratha and gently press.
Cook for 1 to 2 more minutes on each side or until golden brown.
Serve with your favorite dip.

• Another way to form the pizza paratha is to roll 2 portions of the dough into thin round crusts, but make the other 1 about an inch smaller. Spread the sauce and filling on the larger dough, then cover with the smaller dough on top. Fold the edges of the bottom dough to bond with the smaller dough on top, then press the sides using a fork to seal.
