This butternut squash soup is the best soup to sip on a cold winter day. In fact, you can make two meals from this recipe! The butternut puree in itself is a meal and be used as a substitute for mashed potatoes.
Total cooking time for this recipe is 1 hour and 55 mins. Serves 4 to 6.
Ingredients:
Butternut Squash Puree:
• 1 butternut squash, roughly around 3 lbs
• 1 head of garlic, chopped horizontally
• 1 tbsp of rosemary
• Salt and pepper to taste
Butternut Squash Soup:
• 3.5 cups of vegetable stock
• 1 onion
• 1.5 tbsp of oil
• Half cup of coconut milk
• 3 tbsp nutritional yeast
• Nutmeg
• Salt and pepper to taste
Instructions:
Preheat the oven to 350F.
Cut the butternut squash into half, lengthwise. Wash and remove the seeds.
Add salt, pepper, and rosemary. Rub oil onto the seasoned side.
Place the garlic inside the squash.
Place the butternut squash on a baking tray. Bake in the oven for roughly an hour.
To check if the squash is ready, poke with a knife. If the flesh is soft, remove from the oven.
Remove the garlic heads but don’t throw them away!
Carefully scoop out the flesh of the squash and place in a blender.
Whirl until it becomes smooth.
Over medium heat, add oil to a large pan. Sweat out the onion and add a few garlic cloves from the ones that was baked with the squash.
Season with nutmeg, salt, and pepper. Cook for 1 to 2 minutes.
Pour the butternut squash puree and nutritional yeast.
Add the vegetable stock and mix well. Let it boil and then lower the heat down to a simmer for 10 to 12 minutes.
Pour the milk and let it boil for another 5 minutes.
Use a ladle to carefully put the soup in a blender. Blend until smooth.
Garnish the soup with parsley, or mushrooms.
Ideas And Tips:
• You can freeze the butternut squash puree for 3 to 5 months. Make sure that you use bags or containers that specifically specifies they are freezer-friendly.
• You can reheat them to make another batch of soup or as a side dish as a substitute for mashed potatoes.
• This recipe uses grapeseed oil, but any preferred oil is ok. The same goes for the milk. You can use other types of milk but this recipe has coconut milk.
