Breakfast is the most important meal of the day. And for many of us, pancakes are a go-to food in the morning. So tasty, and yet simple and fast to make. But are pancakes really the healthiest option? Maybe not usually, but with this recipe, their health value makes a great jump, while they do not lose anything, they will still taste great. Not to mention that they also look super cute, so they are definitely something you can offer to any guests.
Ingredients:
• 1 cup quick cooking oats
• 1/2 cup gram flour/chickpea flour
• 1/4 cup greek yogurt
• 1 cup water
• 1 small carrot, grated
• 1/4 cup cabbage, finely chopped
• 1/2 cup red and yellow bell peppers
• 1 medium onion, finely chopped
• 2 green chilies, finely chopped
• 1/2 inch piece ginger, minced
• 1/2 teaspoon turmeric powder
• 1 teaspoon cumin seeds
• 1/2 teaspoon garam masala (optional)
• 1/4 teaspoon pepper powder
• a few coriander leaves, chopped
• a few mint leaves, chopped
• a generous pinch of baking soda
• oil for frying
• salt to taste
Instructions:
Grind oats to a fine powder.
Take oats powder and put it into a big bowl.
Add gram flour, salt, turmeric powder, cumin seeds, garam masala, and pepper powder.
Using a whisk, mix the ingredients in the bowl until they are combined.
Add the yogurt and water. Whisk well until combined.
Add green chilies, ginger, carrot, cabbage, onion, red and yellow pepper, coriander leaves, and mint leaves, and mix them in.
Add the baking soda and mix well.
Spread a teaspoon of oil in the baking pan.
Pour a ladle full of batter and spread it evenly.
Cook on the medium heat until the pancakes are brown underneath.
Flip and cook the other side until it is brown too.
Add oil to the pan again and repeat cooking the pancakes for the remaining batter.
Serve hot with plain yoghurt or tomato ketchup
Tips and ideas:
If you do not have the gram/chickpea flour, you can also use all purpose flour and eggs.
You can mix in different vegetables in the batter too, such as brocolli (cook it for 2 minutes in a salty boiling water, and then drain it and crumble into tiny pieces), depending on what veggies you like the most.
