Curry fish is another Caribbean recipe that will truly give you a good dinner or lunch. This traditional dish originated from Trinidad and Tobago emphasizes the rich flavor of the seasonings mixed into the curry.
Ingredients:
• 4 tbsp all-purpose flour
• Vegetable oil
• Fresh ground black pepper
• 4 slices of King fish
• Lime or lemon juice
• 1 green bell pepper (chopped)
• Cilantro (chopped)
• Scallion (chopped)
• 1 tbsp Caribbean green seasoning
• Garlic (chopped)
• 1 onion (chopped)
• 1/2 teaspoon masala
• 2 tbsp curry powder
• 2 tomatoes (chopped)
• 1/2 teaspoon salt
• 1 scotch bonnet pepper (chopped)
• 1 cup water
Instructions:
For fish marinade:
Place the 4 slices of King fish into a bowl.
Season with salt, masala, curry powder, Caribbean green seasoning, and black pepper.
Add all the chopped up ingredients like green bell pepper, scallion, tomatoes, and scotch bonnet pepper.
Mix well.
Let it marinate for an hour or two.
For frying the fish:
Set frying pan over medium-high heat.
Pour vegetable oil.
Coat marinated fish with all-purpose flour and place it on the frying pan.
Fry for 5 minutes on each side of the fish or until golden brown.
Transfer to a plate.
Set aside.
For the curry sauce:
Set sauce pan over high heat.
Drizzle a 2 tablespoons of vegetable oil.
Saute garlic and onion for 2 minutes.
Turn to low heat.
Add in curry powder then mix for 2-3 minutes.
Add all the seasonings and chopped ingredients from the fish marinade.
Stir for 2 minutes.
Pour in a cup of water.
Let it simmer for 3 minutes.
Place the fried fish slices on the pan.
Let it cook for 5 minutes.
Top it off with chopped cilantro.
Transfer to a plate and serve.
Tips and ideas:
To add more flavor to the fish, you can squeeze lime or lemon juice for marinating.
