Salmon is a popular oily fish packed with healthy omega-3 fatty acids and protein. However, this fish is easily overcooked.
This recipe shows how to keep the salmon juicy, fresh, light, and crispy all at the same time. The green pea mash perfectly matches the salmon with its buttery flavors and its bright green color stands out as it peeks under the salmon.
Ingredients:
Sous Vide Salmon:
• 2 salmon fillets with skin
• Salt
• Sugar
• Olive oil
• Black pepper
Green Pea Mash:
• 200 grams of frozen green peas
• 2 grams of kosher salt
• 50 grams of water
• 30 grams of unsalted butter
• 3 grams of lemon juice
• Black pepper
• Olive oil
• 3 grams of flat parsley
• 1 gram of tarragon leaves
• 3 grams of minced chives
Instructions:
This recipe takes about 65 to 70 minutes to make. Serves 2.
Place the salmon in an airtight bag with oil.
Submerge the bag in a pot filled with water. Cook for 35 minutes in 122F temperature.
Add green peas, butter, and water in a saucepan. Cook until tender.
Once cooked, add parsley, tarragon, chives, and lemon juice.
Mash until smooth and add butter.
Mix well until butter has melted.
Remove salmon from bag.
Over medium-high heat, add oil to a pan.
Place salmon skin-side down.
Cook for 45 seconds.
Transfer salmon to a plate. Drizzle skin-side with oil and season with salt.
Scoop a spoonful of green pea mash on a plate. Place the salmon on top.

• Aside from butter, you can use cream for the mash. You can also use other vegetables aside from green peas such as chickpeas or kidney beans.
