Instructions:

Follow package instructions to cook the pasta.
In a pan, add oil and garlic over medium-high heat.
When the garlic turns brown, lower down the heat to low-medium.
Add pumpkin puree and coconut milk.
Season with salt.
Stir for a few minutes on low heat.
Transfer pasta to the sauce and serve.
2. Sriracha Udon Stir-fry
Ingredients:
• Chopped mixed vegetables
• Half a block of soy tofu
• 1 package of pre-cooked udon noodles
• 1 tbsp of soy sauce
• Half a tbsp of garlic powder
• Half a tbsp of maple syrup
• Half a tbsp of sesame oil
• 2 tbsp of Sriracha
• Toasted sesame seeds
Instructions:
Serves 1.
Stir fry vegetables.
Season with soy sauce, garlic powder, sesame oil, Sriracha, and maple syrup.
Crumble tofu into the mix.
Add udon noodles and stir.
Sprinkle sesame seeds and serve.
3. Rice Vermicelli With Peanut Sauce
Ingredients:
• 1 serving of rice vermicelli noodles
• Mixed vegetables
Sauce:
• 1 tbsp of peanut butter
• 1.5 tbsp of rice vinegar
• 1 tsp of ginger
• Half a tbsp of garlic powder
• Half a tbsp of maple syrup
• 1 to 2 tbsp of water
Instructions:
Serves 1.
Boil some water.
In a big bowl, add vermicelli noodles.
Chop vegetables and add to the hot water with the noodles.
After 6 to 10 minutes, check if the vegetables are tender.
Drain them and transfer to a plate.
Mix all of the sauce ingredients. Add more water if the sauce is too think.
Stir noodles and vegetables with the sauce until well coated.
