Raw Food Deep Dish Lasagna (Low Fat)

Lasagna is an Italian dish made from layers of flat pasta, tomato or marinara sauce, cheese, meat, vegetables, herbs, and spices. In other regions of Italy, hard-boiled eggs are also used as stuffing for this dish. Baked lasagna is a popular favorite among pasta lovers all over the world. Vegans can also enjoy this delicious Italian dish. With this recipe, you can enjoy a raw, vegan, dairy-free, and gluten-free lasagna anytime. Pasta is replaced with thinly-sliced zucchini, and layered with spinach, cilantro, parsley, cherry tomatoes, marinara sauce, and topped off with creamy pine nuts sauce. Enjoy an entire dish of lasagna without any guilt.

Ingredients:

• 4 zucchinis
• Cherry tomatoes
• Spinach
• Cilantro
• Parsley
• 1 green onion
• Raw marinara sauce
• Arugula

Cheese

• 1/4 cup of pine nuts
• 1 zucchini
• 1 clove of garlic

Instructions:

This recipe takes 10 to 15 minutes to make.

Cut both ends of the zucchini.
Slice using a mandolin to make thin strips.
Place the zucchini strips at the bottom of a deep dish.
In a food processor, place spinach, parsley, and cilantro.
Blend until vegetables turn into small pieces.
Sprinkle the vegetables on top of the zucchini layer.
Drain marinara sauce to remove excess liquid.
Spread our marinara sauce on top of blended vegetables.
In a food processor, place pine nuts, garlic, and zucchini.
Blend until smooth and creamy.
Spread over the layer of vegetables.
Continue to layer until you reach the top of the dish.
Cut cherry tomatoes in half and place on top.
Place green onion and arugula in a food processor. Blend until chopped into small pieces.
Sprinkle over the layer of vegetables.

Ideas And Tips:

• Aside from pine nuts, you can substitute with pumpkin seeds or sunflower seeds to make the cheese.
