Ingredients:
• 1 cup flour
• 2 tbsp onion (diced)
• 1/4 cup tomato (diced)
• 1/4 cup carrot (shredded)
• 2 tbsp green and yellow capsicum (diced)
• 1/4 tsp black pepper
• 1 tbsp chili flakes
• 1/2 tsp salt
• 1 tsp mint
• 2 eggs
• 350 ml milk
• 1 tsp oil (for frying)
Instructions:
This recipe takes about 5 minutes.
In a mixing bowl, add all ingredients – 1 cup flour, 2 tbsp onion, 1/4 cup tomato, 1/4 cup carrot, 2 tbsp green and yellow capsicum, 1/4 tsp black pepper, 1 tbsp chili flakes, 1/2 tsp salt, 1 tsp mint, 2 eggs, and 350 ml milk.
Mix until well combined.
Set a nonstick pan over medium-high heat.
Drizzle with 1 tsp oil.
Scoop a mixture into the pan.
Cook for 3-4 minutes on each side or until golden brown.
Remove from the pan.
Do this with the remaining mixture.
Fold each crepe and serve.
Enjoy!
