Baked Banana Oatmeal Muffin Cups Recipe

Enjoy the afternoon and prepare these baked banana oatmeal muffin cups for snacks. These homemade and healthy muffin cups can also be prepared as a hearty breakfast. Top them off with mini chocolate chips, sliced strawberries or blueberries for added flavor.

Ingredients:

• 3 cups rolled oats
• 2 tsp baking powder
• 1 tsp cinnamon
• pinch of ground nutmeg
• 1/2 tsp kosher salt
• 2-3 large ripe banana
• 2 eggs
• 1.5 cups almond milk (unsweetened)
• some mini-chocolate chips

Instructions:

Preheat oven to 350 F.

Prepare a mixing bowl.
Add rolled oats and baking powder.
Season with cinnamon, ground nutmeg and kosher salt.
Mix to combine.
Set aside.

In a separate mixing bowl, mash 2-3 large ripe bananas.
Crack open two eggs.
Pour unsweetened almond milk.
Mix until well combined.
Transfer it into the rolled oats mixture.
Mix until well combined.
Set aside.

Prepare a 12-cup muffin tray.
Lightly grease with coconut oil.
Fill each cup with the mixture.
Sprinkle mini-chocolate chips on top of each muffin batter.
Place inside the preheated oven.
Let it bake for 20-25 minutes.
Once done, remove from the oven and let it cool.
Serve and enjoy!

Tips and ideas:

You can mix the mini chocolate chips in the batter instead of adding as toppings.

You can replace mini chocolate chips with chopped walnuts, sliced strawberries or blueberries.

Spaghetti and Meatballs Muffin Bites

Give your muffin bites a more flavorful twist by preparing this quick and easy spaghetti and meatballs muffin bites recipe. You can serve these muffin bites as appetizers or snacks. It only takes 45 minutes to prepare and cook this yummy treat.

Ingredients:

• 6 oz spaghetti (uncooked)
• 1 1/2 tbsp olive oil
• 1 cup parmesan cheese or more (grated)
• any pasta sauce
• 12 bite-sized meatballs (cooked)

Instructions:

Set a large pot over medium-high heat.
Fill it with water and a pinch of salt.
Let it boil.
Once it boils, add the uncooked spaghetti.
Let it cook for 5-7 minutes or until al dente.
Once done, drain the water and transfer spaghetti into a mixing bowl.
Drizzle some olive oil.
Toss the spaghetti and place inside the fridge for 15 minutes.
Once done, remove from the fridge and add a cup of grated parmesan cheese.
Toss to combine.

Preheat oven to 375 F.

Prepare a 12-cup muffin tray and lightly grease it.
Fill each muffin cup with the spaghetti.
Add 1 tbsp of any pasta sauce on top of each spaghetti cup, followed by one bite-sized meatball.
Cover each meatball with a tablespoon of pasta sauce.
Garnish with some grated parmesan cheese.
Place inside the preheated oven.
Let it bake for 20-25 minutes.
Once done, remove from the oven and let it cool fora few minutes.
Remove each spaghetti muffin bite using a rubber spatula.
Place them on a plate.
Sprinkle with some grated parmesan cheese.

These delicious breakfast muffins are perfect for busy people. These muffins are easy and quick to prepare. You can make them ahead of time and store them in the fridge. There are three delicious flavors that you can prepare – blueberry banana muffins, spiced carrot and apple muffins or bacon and egg muffins.

1. Blueberry Banana Muffin

Ingredients:

• 1 cup all-purpose flour
• 1 cup whole wheat flour
• 1/2 cup sugar
• 1 tbsp baking powder
• 1/2 tsp salt

• 2 eggs
• 1/4 cup melted butter
• 1 cup yogurt

• 2 ripe bananas (diced)
• 1 tsp vanilla extract
• 1 tsp chai spice
• 1.5 cups blueberries

Instructions:

In a bowl, add all-purpose flour and whole wheat flour.
Add sugar, baking powder, and salt.
Mix until well combined.
Set aside.

Preheat oven to 375 F.

In another bowl, crack open eggs.
Add melted butter and yogurt.
Mix until well combined.
Add ripe banana slices.
Mash the banana in the mixture and mix well.
Pour into the flour the mixture.
Mix until well combined.
Add vanilla extract, chai spice, and blueberries.
Mix until batter us week combined.
Set aside.

Prepare a muffin tray with muffin cups in it.
Fill each muffin cup with the batter.
Place inside the preheated oven and let it bake for 25-30 minutes.
Remove from the oven and let it cool for a few minutes.

2. Spiced Carrot & Apple Muffin

Ingredients:

• 1 cup whole wheat flour
• 1/2 cup sugar
• 1 tbsp baking powder

• 1 cup yogurt

• 1/2 cup applesauce
• 1 tsp cinnamon
• 1/4 tsp ground ginger
• 1 tsp vanilla extract
• 2 carrots (grated)
• 2 small apples (grated)

In a bowl, add all-purpose flour and whole wheat flour.
Add sugar, baking powder, and salt.
Mix until well combined.
