1. Veggie Spinach Rolls

Ingredients:

• 8 oz frozen spinach leaves
• 1 medium carrot (shredded)
• 1 1/2 tbsp parsley (chopped)
• 1/2 red bell pepper (chopped)
• 1/2 onion (chopped)
• 1 clove garlic (minced)
• 1 egg
• 3 egg whites
• 1/4 low-fat mozzarella cheese
• 1 tsp olive oil
• Salt and black pepper to taste

Instructions:

Preheat oven to 400 F.

Thaw spinach leaves.
Squeeze out water.
In a mixing bowl, add spinach, 3 egg whites, and mozzarella.
Season with salt and pepper.
Mix until well combined.
Line parchment paper on a baking sheet.
Lightly grease with cooking spray.
Pour the spinach mixture and flatten evenly.
Let it bake for 15 minutes.
Set aside and let it cool.

Set a skillet over medium-low heat.
Add oil and fry onions and garlic.
Add red bell pepper, carrots, and parsley.
Season with salt and black pepper to taste.
Mix until well combined.
Cover the skillet and let it simmer for 2-3 minutes.
Switch off heat.
Add egg and mix very well.

Flip the spinach mat and place it again on a baking dish with parchment paper.
Put the vegetable filling over the spinach mat and spread evenly.
Roll it up carefully.
Let it bake for 25 minutes.
Remove and transfer to a cutting board.
Cut into bite-size slices.

2. For Stuffed Bell Pepper Rings With Veggies

Ingredients:

• 4 oz ground turkey
• 2 bell peppers
• 1 mushroom (sliced)
• 1/2 onion (chopped)
• 1 garlic clove (chopped)
• 1 egg white
• 4 tbsp tomato sauce
• 1/4 tsp Italian seasoning
• 1 tsp olive oil
• 1 1/2 tbsp parsley (finely chopped)
• Salt and black pepper to taste

Instructions:

Preheat oven to 350 F.

Slice the bell peppers into rings about 2-3 inches thick and separate the bottom parts.
Finely chop the bottom parts to be added in the filling.
Set a medium skillet over medium heat.
Add olive oil and heat it.
Saute garlic and onion.
Add bell peppers and mushroom.
Season with salt and black pepper to taste.
Mix well.
Transfer to a mixing bowl.
Add ground turkey, parsley, and egg.
Sprinkle Italian seasoning.
Mix until well combined.
Place the bell pepper rings on a baking dish lined with parchment paper.
Fill the rings with the turkey mixture.
Top it off with tomato sauce.
Let it bake for 30-35 minutes.
Serve and enjoy!

3. For Broccoli Crust Pizza

Ingredients:

• 1 medium head broccoli (steamed)
• 1 egg
• 1 mushroom (sliced)
• 1/4 red bell pepper (sliced)
• 1/4 onion (sliced)
• 1/4 tsp Italian seasoning
• 1/4 cup + 1 tbsp low fat mozzarella cheese
• Salt and black pepper

Instructions:

Preheat oven to 400 F.

Pulse steamed broccoli in a food processor.
Squeeze out water in a dishtowel.
Transfer broccoli to a bowl.
Add egg seasoned with salt and black pepper.
Mix well.
Add 1/4 cup low-fat mozzarella cheese and mix well.
Transfer to a baking dish lined with parchment paper.
Form the mixture into a thin, round pizza crust.
Let it bake for 20-25 minutes.
Remove from the oven.
Spread evenly tomato sauce.
Sprinkle 1 tbsp low-fat mozzarella cheese on top.
Add onion, red bell pepper, and mushroom slices as toppings.
Bake for 10 minutes.

Spinach And Cheese Quiche Recipe

Quiche is a popular French dish that consists of a pastry crust filled with a combination of cheese, vegetables, and meat or seafood. In this recipe, we will be cooking a savory filling with a combination of spinach and cheese.

Ingredients:

For the crust:
• 2 1/4 cups (280 grams) flour
• 3/4 cup (170 grams) cold butter (cubed)
• 4-6 tbsp cold water
• 1 teaspoon salt

For the filling:
• 400 grams (14 oz) fresh spinach
• 1 yellow onion (chopped)
• 1 red onion (chopped)
• 3 eggs
• 1/2 teaspoon salt
• 1/4 teaspoon pepper
• 1/4 teaspoon nutmeg
• 240 ml (1 cup) heavy cream
• 200 grams (7 oz) gruyere cheese (shredded)
• 90 grams (3 oz) blue cheese (cubed)
• 2 garlic cloves (crushed and optional)
• Butter and olive oil for frying

Instructions:

This recipe takes about 2 hours. Serves 8.

For the crust:
Prepare a food processor.
Add flour, salt, and cold cubed butter.
Process or blend the ingredients until it forms crumbs.
Slowly add cold water.
Continue to process until it forms a dough.
Transfer to a flat board or surface.
Flatten into a disk and wrap in plastic.
Keep in the fridge for 30 minutes.

For the filling:
Set a large pan over medium heat.
Melt butter, then add olive oil.
Saute yellow and red onions for 5 minutes.
Add crushed garlic.
Stir for 1-2 minutes.
Add spinach and let it cook until spinach is reduced in size.
Transfer and drain the excess liquid.
Set aside

In a separate bowl, beat eggs.
Add heavy cream.
Season with salt, pepper, and nutmeg.
Whisk until well combined.
Set aside.

The assembly:
Preheat oven to 350 F.

Remove the dough from the fridge.
Lightly dust a flat surface or board with flour.
Place the dough on it and lightly dust the top with flour.
Roll out the dough to 1/8 inch thick.
Transfer the dough to a pie pan (24-25 cm).
Press the dough on the bottom and sides of the pan.
Cut off excess dough.
Pierce the bottom of the crust using a fork.
Keep in the freezer for 30 minutes.
Get it out and line a parchment over the dough.
Fill it with rice, beans, or pie weights.
Bake it for 15 minutes.
Remove from the oven and also remove the pie weights and parchment paper.
Return the pie crust in the oven and let it bake for 5-10 minutes or until the dough turns golden brown.
Remove from oven.
Put the spinach mixture first and spread evenly.
Add gruyere and blue cheese.
Pour the egg mixture on top of the cheese.
Put inside the oven and let it bake for 35 minutes or until its golden brown.
Remove from the oven and let it cool for a while.
Serve and enjoy!

Tips and ideas:

You can serve this dish with crusty bread, vegetable bisque, fruit salad, or coffee.

You can also add cheddar cheese if you want it a lot cheesier.

Cheesy Chicken & Spinach Stuffed Shells

Are you craving for an Italian dinner? Cheesy chicken and spinach stuffed shells is the perfect dish for you. This is a super simple and easy recipe to make. It’s packed with two of our most favorite – cheese and chicken! The more cheese you put, the more delicious it gets. Best served with a fresh vegetable salad or crostinis.

Ingredients:

• 2 large boneless chicken breasts
• 1 box (15 oz) jumbo pasta shells
• 1 jar (26 oz) spaghetti sauce
• 1 cup ricotta cheese
• 1/2 cup parmesan cheese (shredded)
• 2 cups mozzarella cheese (shredded and divided)
• 8 oz cream cheese (softened)
• 2 cups fresh spinach (diced)
• 3 garlic cloves (minced)
• 1/2 small white onion (diced)
• 1/4 cup mayonnaise
• 1/2 tbsp Italian seasoning
• 1 egg (beaten)
• 1 tbsp parsley flakes
• Salt
• Black pepper

Instructions:

This recipe takes about 1 hour and 10 minutes. Serves 6-8.

Preheat oven to 450 F.

Season chicken breasts with salt and black pepper.
Roast in the oven for 30-35 minutes.

Meanwhile, cook the jumbo pasta shells in a large pot with boiling water for 12-15 minutes.
Stir occasionally to avoid the pasta from sticking together.
Drain and rinse with cold water.
Separate the pasta shells and place them on a baking sheet.
Set aside.

Get the roasted chicken and let it cool.
Dice the chicken breasts.
Put in a large bowl and mix with diced spinach and white onion.
Add minced garlic.
Mix well and set aside.

In a separate bowl, mix ricotta, parmesan, and cream cheese.
Add mayonnaise.
Sprinkle parsley flakes and mix well.
Add mozzarella cheese and beaten egg.
Mix well to combine all ingredients.
Season with salt and pepper.
Mix with chicken mixture.
Set aside.

Prepare a baking dish.
Cover the bottom and edges with spaghetti sauce.
Fill the pasta shells with the chicken and cheese mixture.
Arrange on the baking dish.
Sprinkle remaining spaghetti sauce on top of the pasta shells.
Cover the dish and let it bake for 30-35 minutes.
Remove from the oven.
Add remaining mozzarella cheese on top of it.
Bake for 5-7 minutes or until the cheese melts.
Serve and enjoy!
