Vegan Recipe: Best Breakfast Burrito

In Mexico, meat and refried beans are commonly the only fillings in a burrito but in the United States, the filling can be a combination of several ingredients like rice, beans, lettuce, salsa, meat, guacamole, cheese, sour cream, and other vegetables. If you’re vegan, it may be hard in some places to buy a burrito that fits your diet, but you can easily prepare one at home! This vegan breakfast burrito recipe uses The Vegg products to make the vegan scrambled egg while vegan meat is used to replace the meat. This vegan burrito is not only great for breakfast or brunch but it is also perfect any time of the day.

Ingredients:

• ¾ cup unsweetened soy milk
• 3 tbsp The Vegg Vegan Scramble
• 1 tsp The Vegg Yolk
• ¼ cup of water
• salt and ground pepper to taste
• 1 cup of vegan meat, chopped
• 1 can black beans
• 3 tbsp taco seasoning
• ½ cup of vegan shredded Monterey Jack or cheddar cheese
• 1 ripe avocado, peeled, pitted and sliced
• salsa
• hot sauce
• 4 large soft flour tortillas

Instructions:

This recipe takes about 45 minutes to make. Serves 4 burritos.

To prepare the scrambled egg, put Vegg Vegan Scramble and soy milk in a large mixing bowl.
Whisk until frothy.
Heat a dry non-stick pan over medium-high heat.
Pour egg scramble mix into the pan and let it cook for about 10 minutes over low heat.
In a small bowl, mix The Vegg Yolk and 1/4 cup of water.
Pour vegan egg yolk mixture over egg scramble.
Mix well and season with salt and pepper.
Let it cook for another 5 minutes.
Add chopped vegan meat to the pan half-way through the cooking time.
Drain black beans and place in a saucepot.
Mix in taco seasoning and heat over medium-high heat for about 2 minutes.
Turn off heat and lightly mash the beans.
To build the burrito, lay the flour tortilla on a plate.
Spread shredded cheese on the center of the flour tortilla.
Top with a couple spoonful of beans.
Line avocado slices on top of the beans.
Put salsa on 1 side of the beans and top it with a few drops of hot sauce.
Spoon scrambled egg and vegan meat mixture on top.
Fold the sides of the tortilla and roll.
Heat burrito in a hot dry pan for about 2 minutes on each side to fully heat the burrito through and melt the cheese inside.
You may serve the burrito whole or sliced diagonally in the center.

Ideas And Tips:

• You may use almond milk or rice milk to substitute soy milk.

• You may add chopped grilled jalapeño peppers and cilantro to your filling.

• You may use any seasoning you want on the scrambled egg and you may even add some of the shredded cheese.
