Smoking is a method of cooking traditionally done to preserve food like meat and fish. Although refrigeration preserves food for us now, smoking is still a popular cooking method because it brings out natural oils in fish. It is also a healthier alternative because there is no oil added to the fish.
This recipe is perfect for salmon as it is a naturally oily fish. Salmon is a wonderful source of healthy omega-3 fatty acids, protein, and Vitamin D.
Ingredients:
• 4 cups of dark brown sugar
• 1 cup pickling salt
• Garlic powder
• Coarse black pepper
Instructions:
This recipe takes about to prepare. Servings depend on the amount of fish to be cooked.
Wash and debone your fish. Pat dry with kitchen towels.
In a bowl, mix brown sugar, salt, and garlic powder.
Place the fillet in a dish. Coat the fish fillet with the brown sugar mixture.
Cover the dish with foil or plastic wrap.
Let it marinate in the fridge for 6 to 8 hours.
Place the fillets on a wire rack to dry for a few hours.
Once dry, season with black pepper on both sides.
Set aside for 2 hours.
Place the fish fillets on a smoker or grill.
Cook for an hour at 180C.
Fish is done when it is no longer translucent.
Ideas And Tips:
• It is better if you use fruit wood when smoking fish. it brings out the flavors in the fish.
• Aside from salmon, you can also use other types of fish like cod, dory, halibut, trout, sea bass, or mackerel.
• You can add more spices to the fish after you pat them dry along with the black pepper. Other suggested spices are red pepper flakes, dried rosemary, dried oregano, and cayenne pepper.
