Korean Style Vegetable Pancake (“Yachaejeon”)

In Korea, the term “jean” refers to a dish made from meat, seafood or vegetables and coated with a mixture of egg and flour.

It is similar to pancakes, but it has no milk or butter. This recipe is a mixture of zucchini, green onions, and chives. It is topped off with shrimps and scallops. Fried to perfection until it is golden brown and crispy. Traditionally, this vegetable pancake is usually eaten as a snack and not as a breakfast meal.

Ingredients:

• Half a cup of flour
• 2/3 cup of water
• Half a tsp of salt
• Half a cup of chopped green onions
• Half a cup of chopped Asian chives
• Half a cup of zucchini
• Half a cup of chopped seafood
• 1 green chili pepper
• 1 egg
• Vegetable oil

Instructions:

This recipe takes about 8 to 10 minutes to make. Serves 2 to 3.

In a bowl, mix flour, salt, and water until no lumps of flour can be seen.
Chop green onions, chives, zucchini, and green chili pepper.
Add the chopped vegetables to the flour mixture and mix well until all the vegetables are coated.
Place a large frying pan over medium heat. Add oil generously to coat the entire pan.
Spread the batter into the frying pan. Press the batter down with a spatula.
Beat one egg and pour on top of the batter.
Chop seafood and place on top of the batter.
When the pancake is 70% cooked, lower the heat.
Flip or turn over the pancake.
Cook for a few more minutes until it is brown and crispy.
Serve with dipping sauce made from 1 tbs of soy sauce and half a tbs of vinegar.

Ideas And Tips:

• To make this dish 100% vegan, you can remove the egg altogether.

• If you don’t have Asian chives, adding more green onions is a better alternative.
