Easy Chicken Parmesan
Chicken parmesan, also known as Chicken parmigiana, is a dish that originated from Italy. The main ingredients for this recipe are chicken breast, tomato sauce, mozzarella cheese and parmesan cheese. You can add provolone cheese to make it even tastier. Ham, bacon, or pasta are sometimes added to the recipe. Easy chicken parmesan is prepared as either a main course or side dish. This recipe takes about 45 minutes and serves four persons.
Ingredients:
• 4 chicken breast fillets (boneless and skinless)
• 1 small onion (finely diced)
• 1 garlic clove (minced)
• 1 lb penne pasta
• 1 x 28 oz can diced tomatoes
• 4 cups baby spinach (chopped)
• 1 cup mozzarella cheese (grated)
• 1/4 cup Parmesan cheese (grated)
• Salt and pepper to taste
• 1 tbsp olive oil
• 1 tbsp Italian seasoning
• 2 1/2 cups chicken broth
• Chopped basil (optional, for garnishing)
Instructions:
Set a large oven-proof skillet over medium-high heat.
Add olive oil and warm it up.
Sprinkle salt and black pepper on both sides of the chicken breast fillets.
Fry for 3-4 minutes on each side or until golden brown.
Remove chicken from the skillet and transfer to a plate.
Continue using the skillet and sauté onion until soft.
Add garlic and sauté for 30 seconds.
Add chicken broth, diced tomatoes, and penne pasta.
Season with Italian seasoning.
Stir until well combined.
Bring to a boil.
Reduce to medium-low heat.
Cover the skillet and let it simmer for 15 minutes.
Stir the pasta every 5 minutes to avoid from sticking on the skillet.
Add chopped baby spinach and stir to combine.
Add back the chicken fillets.
Top it off with grated mozzarella and parmesan cheese.
Remove from the heat and place inside a preheated oven at 350 degrees.
Bake for 15 minutes.
Once done, remove from the oven.
Sprinkle chopped basil and parmesan cheese for garnishing.
Serve and enjoy!
