Restaurant Style Chicken Handi

Chicken Handi is a creamy and spicy Indian dish that is perfect for a weeknight dinner. Chicken cubes are stir-fried in a mix of spices with chopped tomatoes. Add some fresh cream to add a mild creamy flavor to this spicy dish. The taste is best paired with cooked rice. This recipe takes about 50 minutes.


For the chicken:

• 400-500 grams boneless chicken (cut into 1-inch cubes)
• 2 tbsp oil
• 2 tsp ginger garlic paste
• 1 tsp salt

Other ingredients:

• 2 tbsp oil
• 3/4 tsp cumin seeds
• 1 large onion (chopped)
• 4 small tomatoes (chopped)
• 1/4 tsp salt
• 1/4 tsp turmeric
• 1 tsp chili powder
• 1 tsp coriander powder
• 2 tbsp curd or yogurt
• 50 ml water + 4-5 tbsp water
• 1/4 tsp pepper powder
• 1/2 tsp Garam masala
• 1 tsp dry fenugreek leaves (roasted and powdered)
• 3 green chili (chopped)
• 1 tbsp ginger slices
• 4 tbsp fresh cream
• 3 tbsp chopped coriander


For the chicken:

Set a pan and heat 2 tbsp oil over low heat.
Fry 2 tsp ginger garlic paste for a minute.
Add the chicken cubes.
Season with salt.
Switch to high heat.
Stir and fry for 3-4 minutes or until the chicken changes color.
Remove from the heat and transfer to a bowl.
Set aside.

Heat 2 tbsp oil over medium heat in a pan.
Stir for a few seconds.
Add chopped onions.
Saute for 5-6 minutes until light brown.
Add chopped tomatoes and season with salt.
Stir and fry for 3-4 minutes until tomatoes are soft.
Season with 1/4 tsp turmeric, 1 tsp chili powder, and 1 tsp coriander powder.
Stir for 3 minutes.
Add the cooked chicken from earlier.
Stir and cook for 5 minutes.
Continue to fry until oil separates.
Add 2 tbsp curd or yogurt.
Reduce to low heat.
Stir for 2 minutes.
Pour 50 ml water.
Cover the lid and cook for 10 minutes.
Season with 1/4 tsp pepper powder, 1/2 tsp Garam masala, and 1 tsp dry fenugreek leaves.
Switch to medium heat and stir for 2-3 minutes.
Add chopped green chili, ginger slices, and fresh cream.
Mix well.
Add 4-5 tbsp water.
Reduce to low heat and simmer for 2 minutes.
Sprinkle chopped coriander and mix well.
Switch off the heat.
Transfer the mixture to a plate.
Serve and enjoy!

For the dressing:
• 1/4 cup extra virgin olive oil
• 1/2 tsp salt
• 1/2 tsp freshly ground black pepper
• 3 tbsp cider vinegar
• 1 tbsp red wine vinegar


Set a large pot over high heat.
Add water and bring to a boil.
Add 5 ears of corn.
Boil for about 5 minutes.
Once done, drain, and pat dry the corns.
Cut off the kernels from the cob using a knife.
Place in a large mixing bowl.
Add other ingredients such as cucumber, Roma tomatoes, red onion, avocado, mint leaves, and basil leaves.

For the dressing:
In a small mixing bowl, add ingredients for the dressing.
Mix until well combined.

Drizzle the dressing over the corn salad.
Toss to combine well.

Tips and ideas:

Toss the ingredients gently to avoid smushing the avocados.

Your friends will adore this perfect burger recipe during a weekend get-together. This recipe takes about 30 minutes to cook and prepare. The amounts listed will make four burgers.


For the patties:

• 1 lb ground chuck beef
• salt and black pepper to taste

For the burger fillings:

• 4 burger buns
• 4 medium cheddar cheese thick slices
• 1 large tomato (sliced to 8 rings)
• 1/2 bunch green leaf lettuce
• 1/2 medium red onion (sliced into rings)
• 1/2 cup dill pickle (sliced to rings)
• melted butter (for the buns)

For the burger sauces:

• 1/3 cup mayonnaise + 1 tsp barbecue sauce
• 1/3 cup mayonnaise + 1 tsp yellow mustard

Preheat grill to medium heat.
