Baked rice and beans is a perfect combination to prepare for a healthy and delicious dinner. The rice is more flavorful with a mix of seasonings, tomato salsa and chicken broth. This recipe takes about 80 minutes to prepare and cook. It serves about eight people.
Ingredients:
• 3 cups basmati rice
• 2 tsp Kosher salt
• 1 tsp ground black pepper
• 2 tsp ground cumin
• 1 tbsp chili powder
• 1/4 tsp cayenne pepper (optional)
• 1/4 tsp dried oregano
• 1/4 cup olive oil
• 1 x 16 oz jar tomato salsa
• 2 cups chicken broth
• 2 x 15 oz cans kidney beans (rinsed and drained)
Instructions:
Preheat oven to 350 F.
Prepare a casserole dish.
Add 3 cups of basmati rice in the dish.
Add seasonings – kosher salt, ground black pepper, ground cumin, chili powder, cayenne pepper and dried oregano.
Drizzle 1/4 cup of olive oil
Mix well to coat the rice.
Pour tomato salsa and chicken broth.
Add kidney beans.
Stir the mixture and distribute evenly in the dish.
Cover the dish with foil.
Place inside the preheated oven.
Let it bake for an hour and ten minutes.
Once done, remove from the oven.
Remove the foil.
Fluff the rice and beans.
Serve and enjoy!

Fried rice is a traditional rice dish originating from Asia. It consists of leftover rice stir-fried with a mix of veggies and egg. Oyster sauce and dark soy sauce give it a rich flavor. It only takes about 30 minutes to prepare and cook.
Ingredients:
• 2 3/4 cups white long grain rice (cooked and drained)
• 3 cloves garlic (roughly chopped)
• 1 small brown onion (finely diced)
• 2 small carrots (peeled and diced)
• 3 scallions (sliced thinly)
• 3 bacon rashers (diced)
• 1/2 cup frozen corns
• 1/2 cup frozen peas
• 3 eggs (beaten)
• 2 tbsp vegetable oil
• 1 tbsp oyster sauce
• 1.5 tbsp dark or light soy sauce
• 1.5 tbsp sake
• 1 tsp sesame oil
• 1/4 tsp white pepper
Instructions:
Set a skillet over high heat.
Add vegetable oil and heat it.
Add diced carrots.
Stir and cook for 20 seconds.
Add diced onions, chopped garlic and diced bacon.
Stir and cook for 3 minutes or until bacon is lightly cooked.
Add frozen peas and corn.
Stir and cook for 20 seconds.
Add cooked rice.
Break chunks of rice.
Drizzle with oyster sauce, dark soy sauce and sake.
Mix well and cook for a minute.
Move the rice mixture to one side of the skillet to give space for the beaten egg.
Add sesame oil, followed by the beaten egg.
Cook until scrambled.
Mix along with other ingredients.
Season with white pepper.
Sprinkle thin slices of scallions.
Mix well.
Once done, remove from the heat and transfer to a plate.

This easy homemade seafood rice is a delicious and savory dish for a family weekend dinner. Combine your favorite seafood with rice and mixed veggies. Add more taste with the perfect mix of seasonings. This recipe takes about 30-40 minutes to prepare and cook.
Ingredients:
• 1/4 lb shrimps (peeled and deveined)
• some crawfish tails (according to your desired amount)
• some crabmeat (according to your desired amount)
• some scallops (according to your desired amount)
• 1.5 cups Jasmin rice (uncooked)
• 1/4 cup celery stalks (chopped)
• 3 tbsp cooking oil
• 2 tbsp butter
• 1/2 cup mixed bell peppers and onions (diced)
• 2 tbsp garlic paste
• 1 cup white wine
• 3 cups beef stock
• 2 bay leaves
• fresh lemon juice (optional)
• chopped scallions (optional for garnishing)
Seasoning Mix:
• 1 tsp salt
• 1 tbsp paprika
• 1 tbsp chicken bouillon powder
• 2 tbsp old bay seasoning
• 2 tbsp cajun seasoning
• 2 tbsp Italian seasoning
Instructions:
Mix all seasoning mix ingredients in a bowl.
Set aside.
Set a skillet over medium-high heat.
Add cooking oil and heat it.
Add butter and melt it.
Once melted, add chopped celery and mixed diced bell peppers and onions.
Reduce to medium heat.
Stir and saute for 5-6 minutes until caramelized.
Add garlic paste and stir to combine.
Add seasoning mix.
Stir and cook to combine.
If the butter has dried up, then add more butter to cook the rice.
Add uncooked Jasmin rice.
Stir and cook for 2-3 minutes to combine well.
Pour white wine, followed by the beef stock.
Stir and cook.
Add all the seafood except the shrimps.
Stir and cover the skillet.
Let it cook for 12-14 minutes.
Once rice cooks, add the shrimps and bay leaves in the skillet.
Put on the lid back and cook for 4-6 minutes or until shrimp cooks.
Once done, switch off the heat and remove the bay leaves.
Drizzle with fresh lemon juice.
Garnish with chopped scallions.
Serve and enjoy!
